PINOT NOIR Canterbury 2006
A new label using fruit harvested from two of our Canterbury vineyards on Banks Peninsula.
The 2006 Canterbury Pinot Noir is a soft, charming wine with complexity and a wonderful spread of flavours. The wine has strong aromas of black cherry, red berry fruits, spice and toast. The palate is fine and intense with generous black cherry and plum flavours. The wine shows exceptional balance with a structure of ripe fruit balanced by soft, integrated tannins and has excellent length. The wine is approachable now and can be enjoyed over the next year or two.

Technical Notes:
The fantastic 2006 vintage produced a small crop of exceptional fruit. The grapes were hand-harvested at optimum ripeness (23.6 to 25.5 °Brix) on several dates ranging from 28 March to 15 April 2006.
All grapes were de-stemmed and gently crushed into small stainless steel fermentation vats. After five days of cold maceration on the skins, the must was inoculated with a range of cultured yeasts. The fermentation reached a peak temperature of 30°C and the must received regular pigéage. The wine was pressed directly into small French oak barrels (25% new oak) for malolactic fermentation and aged on light lees for 12 months.
